WHAT IS A COSTCO CHICKEN BAKE?

A Costco Chicken Bake is a popular menu item sold at Costco’s food courts. It's basically a large oven-baked flatbread that is stuffed with chicken, bacon, cheese, and Caesar dressing, then baked to golden perfection. It's a great on-the-go meal. I do have a separate recipe for this as well, but this recipe on this page here is basically a Costco Chicken Bake in a pasta form!

INGREDIENTS

Chicken breast: Other chicken cuts will do as well, just keep in mind the differences in macros. Chicken thighs may make this dish a bit too rich so just be mindful of that.

Pasta: You can use any type of pasta of your choice.

Bolthouse Farms Creamy Caesar dressing: Bolthouse Farms Creamy Caesar dressing is a great choice because it's about 50 calories per serving, whereas other Caesar dressings can be about 120+ calories per serving.

Fat-free cottage cheese: Cottage cheese is one of the main ingredients for the base of the sauce, but it's also a great source of extra protein. I promise, you won't be able to taste the cottage cheese.

Fat-free milk: Personally, I like to use Fairlife Fat-Free milk because it has no lactose and more protein! Using other brands is fine too.

Green onions: You can use fresh green onions or chives - up to you, but also totally optional.

Salt & black pepper: To season!

Center cut bacon: Center cut bacon generally has a lower fat content and still tastes just as delicious!

Pasta water: You can save a little bit of pasta water to help loosen the sauce if it ends up being too thick.

How should I reheat it?

When microwaving, add in some water first. It'll mix so much better and be saucier. The sauce should not curd when microwaving.

TIP: DO NOT mix hot pasta or hot water into the sauce. DO NOT heat the sauce in a pan either. It will curd up and not mix well.

STEP-BY-STEP INSTRUCTIONS

STEP 1

Cook pasta according to package instructions and set aside to cool.

STEP 2

Season chicken with salt and pepper. Then, cook chicken on a pan under medium heat until done. You can also cook it in an airfryer at 390 degrees for 12015 minutes. Chop chicken into cubes.

STEP 3

Lay out bacon in a baking tray and 400°F for 8-10 minutes until desired crisp. Then, set aside to cool. Once cooled, chop the bacon into smaller pieces.

Blend cottage cheese and milk together. You can add some pasta water if the mixture is too thick, but make sure the pasta water has cooled down!

In a large bowl, combine and mix the pasta, chopped chicken, chopped bacon, green onion, blended cottage cheese, caesar dressing, and pepper.

Divide between 5 portions and enjoy!
